Vegetarian or plant milk can be made from different cereals (barley, oats, rice, spelt), legumes (lupine, pea, peanut, soy), nuts (almond, cashew, hazelnut, walnut), seeds (hemp, quinoa, sesame seeds, sunflower kernels) or coconut milk.

A must for those who are lactose intolerant or vegetarian or vegan.

notenmelkNut milk can be made with almonds, hazelnuts, Brazil nuts, cashews, macadamia nuts, walnuts, pecans, peanuts, sunflower seeds, pumpkin seeds, pine nuts, sesame seeds and various mixtures thereof.
Mostly used raw; roasted, they usually have a more pronounced and less neutral taste.
This also applies to non - pealed across peeled nuts: these give a smoother milk.

Let 1 cup nuts overnight (8 hours) covered in 3 cups of water. Alternatively you can peel them afterwards. Skinning is easier if you have the nuts roasted or dryed (oven, stove) and then wrapped and rolled in a kitchen towel. You can also make pumpkin seed milk by blending the seeds with water and sieving.

Oat milk is also very popular and easy to make. Soak 100 grams of oats in 700 (à 900 gr) water, depending on how "thick" you want the milk. Let soak. Mix. Sieve the stuff or press it through a (cheese or nettle) cloth.


The finely ground nuts can still be used in baked goods (breads, cakes, pancakes), garnish (roasted on cakes, salads, muffins, soups, (oatmeal) porridge, muesli .. )
Or add some lemon juice, a little olive oil, chili powder, salt and pepper and you have a delicious nut hummus!
Or use it in veggie burgers or chopped nuts.


Making yogurt from nut milk
Of milk substitute you can’t a real yogurt. The bacteria that make yoghurt from milk process lactose to lactic acid. There are recipes to thicken milk substitutes and to sour them.
Butter can be replaced by coconut butter (a kind of solidified, white oil).

Nut butters as spreads you can make by pulverizing them in the blender (without water).
With some cocoa in it, you make notella.


Chopped nuts
Mix 100 grams of chopped nuts , chop 1 (and possibly lightly fried) onion, oil, 100 grams of whole wheat flour, 1 (beaten) egg, salt and pepper with a dash (nuts) milk to a stiff pliable dough. Make plain biscuits and bake slowly brown and cook in hot oil.
