koekMueslirepenI limit myself to simple base recipes with healthy products from the area. Without many exotic delights. Without however renouncing all chocolate and cayenne pepper. Cookbooks and the internet provide 1.000’s suggestions and recipes. Personally, I always stay close to my cookbook Women farmers Union 1963. Since I could not find a previous version until now.
A party means good food (and drinks). The ingredients for cakes and pastries are always: flour, milk, butter, sugar, eggs in varying proportions; and fantasy.

Pepernoten or kruidnoten (no translation for those spicy nuts available)
Preheat oven to 170° C. Mix 100g soft butter in a mixing bowl. Knead in this 250g self-raising flour, 125g brown sugar, pinch of salt, 50 ml of milk and ground mixed spice: e.g. 1 teaspoon cinnamon, ½ teaspoon nutmeg ½ teaspoon cloves, ½ teaspoon anise seeds, ¼ tsp ground ginger; or 15 g of cinnamon, nutmeg 5 g, 5 g cloves, 2 g white pepper, aniseed 3 grams, 3 grams of ginger powder. (To taste).

Make small balls and place on baking paper on a baking sheet. Bake the gingerbread cookies for about 15 minutes in the preheated oven.

Butter cookies
Put 250 grams of flour in a bowl. Knead it with 100 grams of butter, 1 tsp vanilla sugar, 100 grams of sugar and an egg.
Do a little flour on the counter to roll out the dough well. Stab or cut out shapes and place on a baking tray. Brush with coffee or egg yolk and sprinkle with granulated sugar, decorate with a piece of nut or half almond. Bake 10 minutes in a preheated oven at 180 degrees C.
You can use self-raising flour and give the dough 30 minutes to rise between.

Shortbread
Put 125 g flour into a bowl. 80 g butter, 10 g vanilla sugar, 50 flour sugar and a pinch of salt in a dimple. Knead firm. But there is a role, put foil around and put them fifteen minutes in the refrigerator.
Set the oven at 180 degrees. Cut the roll into slices of a half a centimeter. Roll it with the side through egg yolks with sugar and place on baking sheet on a baking tray. Bake for 20 to 25 minutes at 180 degrees.

Speculoos (brown spiced biscuit)
Stir 1 tablespoon cinnamon in 225g self-raising flour.
Beat 125 grams (preferably brown) sugar and 225 grams of real dairy butter to fluffy cream.
Then whisk in 1 tablespoon honey or syrup and then an egg yolk. Mix the flour-cinnamon mixture upon this. If the dough is too sticky to roll balls, let it 1 hour in the refrigerator.
Roll balls, and cover them with sugar. Place on a greased baking sheet and bake them off in 12 to 15 minutes.
A spiced mixture consisting mainly of cinnamon anyway.

Waffle
Work with ingredients at room temperature. Melt 350g butter and allow to cool. Stir five eggs one at a time to the butter. Stir in 200 ml of milk and 100 ml of oil, then 400 g of sugar (and possibly five packets of vanilla sugar). Sieve 500 g flour and scoop it slowly, with 1 packet of baking powder.
Bake (with oil) in a hot waffle iron. (in a cold is not easy, ...)
Beer, or yeast, lumps of sugar, spices ... are more possibilities to add.

Cupcakes
Preheat the oven to 170 gr. Celsius (depending on your oven) and place the ramekins on the baking sheet.
Cut 125 grams of butter into cubes and mix until smooth. Then add 2 large eggs and 2 tablespoons milk. Then 125g self-raising flour and 125 grams of sugar and beat for 3 minutes until you have a smooth, airy batter.
Fill the forms just half and bake the cupcakes about 20 minutes. Check with e.g. a toothpick if that comes out dry from the cake if you prick in the middle. And now the dressing!

Donuts
Mix 10 grams of dried yeast, 60 ml of lukewarm water, 250 ml of lukewarm milk and one tablespoon of sugar. Leave for 10 minutes to ferment. Mix with 100 grams of melted butter, 575 grams of sifted flour, 3 eggs, 3 tbsp caster sugar until a sticky dough. Leave the dough +45 minutes in a (greased) covered bowl to rise until double in size.
Knead the dough on a floured surface until it feels smooth and elastic.
Roll out to about one centimeter thick. Use round cutters (e.g. tin, corer ..) to cut the donuts and put them on a coated baking sheet. Cover the plate with a tea towel and let rise again for 30 minutes.
Heat the oil in a saucepan at medium heat (180 degrees). Fry the donuts on each side until golden brown. Drain on paper towels.
Decorate with e.g. chocolate, cinnamon sugar, a sweet glaze layer: add a little water (or melted butter) to a bowl of icing sugar and stir until smooth.

Granola Bars
Take 130 grams of oat flakes, 60 grams mixed, unroasted, unsalted nuts and seeds (linseed, sunflower seeds, sesame seeds, pumpkin seeds, almonds, hazelnuts, walnuts. ...), 75 grams pitted dates, 2 teaspoons grated lemon peel and 1 tablespoon cinnamon briefly in the blender or chop them coarsely. Heat 70 grams of honey and then add 2 tablespoons oil and 2 tablespoons of water. Stir in the oat mixture into a sticky mass.
Spread on a baking sheet in a plate and bake for about 25 to 30 minutes at 200 degrees nicely brown. Cut the slice into strips. They become harder during cooling.

Fruit Bars
Same basic recipe, replace half of the dates by berries, dried apricots or apples, grapes and / or raisins.

Substitutes and alternatives
Greaseproof paper is specially treated paper used in the oven to prevent food sticking to the griddle or baking mold. Alternative to self-reliant homestead :
Well greased plate. A non-stick coating of breadcrumbs or flour. Or replace the paper sheet with leaves of maple, grape, hawthorn, or herbs (lavender, fennel ...)

One egg can be replaced in many preparations by:
3 tablespoons peanut butter, tahini or other nut butters
1 tablespoon flax seed with 3-4 tablespoons of water mixed approximately 1-2 minutes in the blender
3 tablespoons of chickpea flour and 3 tablespoons water
2 tablespoons arrowroot mixed with 2 tablespoons water
warmed cornstarch with some water
mashed half banana (especially in sweet dishes like pancake or cake)
2 tablespoons baking powder 2 tablespoons + water + 1 tablespoon oil
